What is Switchel?!! I am glad you asked, while it is an acquired taste, for centuries it has kept farmers from leg cramps and dehydrating in the hay fields. think of it as the original energy drink!
The molasses is loaded with iron, magnesium and calcium, the ginger supports your immune system, and if you become dehydrated you need that support. The recipe can be switched up (get it? Switchel) to be sweetened with maple syrup or honey if you want to use less sugar.
Mix Sugar, molasses, vinegar and ginger in one quart of water. Heat on low until sugar is completely dissolved.
Add the remainder 3 quarts of water and chill. Serve cold! This is a great thirst quencher and should be cold and ready to go when haying or working on hot days.
