Chicken Divan

Nutritional Tidbit from Audrey. People either love broccoli or hate it. But no one can dispute the incredible nutritional benefits it has. When broccoli is lightly blanched is when your body can assimilate the nutrients the easiest. Broccoli is high in fiber, vitamin c, vitamin k, iron and potassium.

Yields1 Serving
 3 tbsp Butter
 1 Diced Medium Onion
 2 Diced Celery Stalks
 2 cups Chicken Broth
 2 cups Diced Broccoli
 1 ½ cups Diced Cooked Chicken
 ¼ cup Cold Water
 ¼ cup Flour
 ¼ tsp Danbury Country Store Nutmeg
 1 tsp Danbury Country Store Rosemary
 2 tsp Danbury Country Store Onion Salt
 1 cup Light Cream (Can use half and half)
 1 cup Milk

In a saucepan melt butter and sauté onion and celery until soft.

Add chicken broth, chicken and broccoli. On a low simmer, cook until broccoli is tender.

In a small bowl mix water and flour, stir into soup and cook until thickened.

Add seasonings, light cream and milk. Simmer until well blended. Do not Boil.

Serve over rice.
