Apple Caramel Cookies

Caramel today is made from butter and sugar, boiled and then stretched and cooled. The first caramel was made in 1000AD as a beauty treatment (think today’s wax treatments) and it was made with sugar and water. Eventually it was called a ball of sweetness and people were eating it instead of using it for beauty.

 1 ½ cups All Purpose Flour
 ½ tsp Baking Soda
 ½ cup Light Brown Sugar
 ¼ cup White Sugar
 ½ cup Light Brown Sugar
 1 Egg
 ¼ tsp Danbury Country Store Salt
 ½ cup Danbury Country Store Apple Pie Spice
 1 tsp Vanilla
 ½ cup Dried Apple Bits (you can use 2 Cups fresh, dry before using and make sure they are cut into small bits)
 1 cup Caramel Bits
 ½ cup Room Temperature Butter

Preheat oven to 350 degrees.
Prepare two baking sheets with parchment paper.

Combine butter, sugars and eggs . Blend well.
Add Vanilla, mix.

In another bowl mix dry ingredients (not apple bit and caramel). Mix well.
Combine dry ingredients to wet mixture, stir well.

Add Caramel and Apple Bits to dough and mix until blended throughout.

Scoop dough (about 1 Tablespoon) onto cookie sheets. Leave space in between for cookies to expand. Cook for 11 - 13 minutes or until edges are slightly brown.

Cool before eating, the caramel retains heat a bit longer and you will burn your tongue if you are too hasty. Enjoy!
