Morning Glory Muffins

Ingredients

  • 1 cupWhole wheat flour
  • ¾ cupSugar
  • ½ cupAll-purpose flour
  • ½ cupOat bran
  • 2 tspBaking soda
  • ½ tspSalt
  • 3 Eggs
  • ¾ cupUnsweetened applesauce
  • ¼ cupVegetable oil
  • ¼ cupMolasses
  • 2 tspVanilla
  • 2 tspOrange rind
  • 2 cupsGrated carrots
  • ½ cupRaisins
  • ½ cupFlaked coconut
  • 1 Peeled and diced apple

Instructions

    Preheat to 350°F; prepare 12 muffin tins with papers or spray.

    Combine flours, sugar, salt, oat bran, and baking soda.

    Mix eggs, applesauce, oil, molasses, orange rind, and vanilla.

    Stir wet into dry until just moistened.

    Fold in carrots, raisins, walnuts, coconut, and apple.

    Fill muffin tins.

    Bake 30 minutes until toothpick comes clean.

    Remove from tins immediately; cool on rack.
