When cooking with honey you will often have both baking powder and baking soda in the recipe to offset the acid in the recipe.
Ingredients
4 cups sifted flour
1 ½ tsp Danbury Country Store Salt
1 tsp Baking Soda
1 tsp Double Acting Baking Powder
2 tsp Danbury Country Store Cinnamon
2 tsp Danbury Country Store Ground Ginger
½ tsp Danbury Country Store Ground Cloves
1 cup shortening, butter or coconut oil
1 ¼ cups Strained Honey (no honeycomb or crystals)
¼ cup Sugar
1 Large Egg

Preheat oven to 350 degrees

Sift together the first seven ingredients, set aside in a bowl. It is important to mix them well so the baking soda and baking powder does not clump in the honey.

Melt the shortening and mix with honey and sugar then cool the mixture.

Beat egg into cooled mixture and then gradually add in the dry mixture.

Beat well and then shape into 1 ½ inch balls.

Place on lightly greased cookie sheet and place 2 inches apart. To accommodate for spreading.

Bake for 15 minutes or until edges are lightly browned, allow to cool and enjoy!
